The only trout I like are from crystal clear mountain streams. I swear they taste better, and the flesh is whiter. My favorite fresh water fish would have to be redfin.

Smoked or cold cured the trout are very nice.Yes  I think redfin are nicer but i am told that the big ones in Wendouree  are only average in  taste. If i catch one i will find out.
