Doug is right on  climate change! "HappySAD7000user" and "Inhere"  and "Arizona"and the  village idiot 1halfgram4three are wrong! They are  scientifically illiterate, climate denier easy beats!!!! They are terrified of the truth and too spineless to come here and debate the issue!!!
The changing climate is NOT due to natural variation!
The  enormous body of diverse evidence, the physics and the overwhelming majority of climate scientists publishing in  recognized peer reviewed scientific journals agree that the earth is warming due predominately to  rising atmospheric  levels of anthropogenic C02!

I went fishing to  Lake Wendouree  yesterday a caught these 3 rainbow trout.I also lost 1 on the fly and due to inexperience with dry fly fishing missed 3 others due to striking too early. Not big fish by  Lake Wendouree standards but will smoke beautifully  tonight for tea. Lake Wendouree  was famous before it dried  up for its Dun hatches and yesterday the fish were rising to a Dun hatch excited and this seems to becoming more common and  Lake Wendouree  may be verge of returning to its former glory. Many of the fish were rising beyond casting distance so i may  now have to invest in a float tube!

Well done Doug!

Smoked fish (incl trout are among my fav way to eat fish). What wood do you use for smoking? Does it matter?

Yes the  type of wood does make a subtle difference to the final flavor. I use hickory and mallee and apple wood .I also sprinkle the fish with Australian native pepper and some fresh lemon juice and olive oil and serve with sour cream and horseradish.
You obviously never use any chemically treated wood.

I have heard of hickory & mesquite being used in the US, and birch and apple used in Europe for smoking fish. The wood oils from smoking would add subtle differences I imagine. No, one does not need the arsenic from CCA or PAHs from creosote for flavour (unless your one of the 0.543.) excited

Enjoy the trout. We are having grilled farmed salmon tonite.
